Fresh Lemon Juice – Helpful Tips

Citrus fruits can be squeezed very easily with good results on relatively inexpensive squeezers especially designed for the job. Nothing compares to the taste of freshly squeezed lemon juice. Pick the fruit with the thinnest skin, it has more flesh inside and therefore more juice to extract. Very cold fruit from the refrigerator yield less juice. A medium size lemon yield approximately 2 – 2 1/2 oz of juice. To add a slightly more piquant flavour to the lemon juice used the rind as an infusion. Store fresh lemon juice in a covered container in the fridge, and it will keep up to 4 days. It can also be frozen for up to 2 months.
