In the 19th century, concoctions of wine and spirits were a staple of colonial taverns. The Bishop is a classic, and if you do a search online for the cocktail you will find many links to a variety of wine drinks. The name seems to come from the color of a Bishop’s robe. The cocktail is essentially a play on mulled wine and is equally as flavoursome. The original recipe calls for superfine (bakers) sugar instead we used simple syrup instead. We choose the Little Black Dress Merlot wine because it is soft, plummy, fruity, and juicy.
