The creator of the Chimayo cocktail, Arturo Jaramillo, was the owner of the ‘Rancho de Chimayo’ restaurant. There were plenty of apples in the Chimayo Valley, New Mexico, where he discovered the great combination of apple with tequila. The Chimayo combines white tequila, hard apple cider, cassis, apple juice, and a bit of lemon juice. This a great cocktail for afternoon sipping.
