Pomegranate Mojito – Highball

Ingredients

Lime wedges
2 mint leaves
1/4 oz Simple syrup
2 oz Mount Gay white rum
1 1/2 oz Pomegranate juice
1 tsp pomegranate seeds

Muddle and Build

1. Put lime wedges (cut in pieces), shredded mint leaves, pomegranate seeds, and simple syrup at the bottom of a sturdy glass.

2. In a mixing glass Muddle lime, mint, and pomegranate seeds until completely crushed.

3. Transfer the content into a highball glass.

4. Fill up the glass with ice.

5. Add rum and pomegranate juice.

6. Top up the glass with Sprite or 7-up.

7. Garnish with a lime wedge or/and fresh mint.

Pomegranate Mojito is a fantastic way to celebrate the holidays season. This fabulous highball is colorful, festive, taste great, and easy to make. Pomegranates are in season and make a wonderful addition to many drink recipes, and its deep red color could not be more fitting for Christmas.
