Flips are a category of mixed drinks.  Around 1700s,  the term was for hot drinks made with a variety of  liquors or wines, sugar, egg, and then heated with a red-hot iron. Flips are back on cocktail menus and are served cold with the exception of old-timer recipes. The Porto Flip combines ruby port, Cognac, sugar, and egg. Definitely, a Porto Flip is worth a try! About eggs: more than a few recipes call for raw eggs or egg whites. To help reduce the risk use only fresh eggs. They add body to your cocktail, and in the case of shaken egg whites create frothiness.
