The Seventh Heaven martini is simple, refreshing, and quick to make cocktail. It is a classic that has been around in various versions at least since the 1920’s. The Seven Heaven is mentioned in Harry Craddock’s Savoy Cocktail Book (1930). The original recipe was made with Old Tom gin and garnished with a sprig of fresh mint. Almost all gin is dry today, an exception is Old Tom gin, which can be described as a sweetened gin. It has become a rare commodity because the trend of popular tastes, as gauged by the relentless pursuit of the driest possible gin for the driest possible Martini. Does it means that Old Tom has become old hat? Don’t count on it, old things have a way of coming back.
