Sweet Leaf – Highball

Ingredients

2 mint leaves
2 lime wedges
1 tsp of white sugar
1 1/2 oz Appleton rum VX
1/2 oz Peach Brandy
Brisk Iced Tea drink

Muddle and Build

1. Tear up the mint leaves and put them in a mixing glass.
2. Cut two lime wedges in small pieces and put them in the mixing glass.
3. Add rum and sugar.
4. Muddle.
5. Strain the content into a highball glass.
6. Add a scoop of ice.
7. Pour in peach liqueur.
8. Top up with Brisk Iced Tea drink.
9. Garnish with fresh sprig of mint leaves.

The Sweet Leaf highball drink was created by Sam Bell, and his concoction is a twist on the classic Mojito. The idea of muddling is to carefully break down things like mint leaves or lime rinds to release the oils, therefore the flavours into your glass. The Sweet Leaf drink got a thumbs up by everyone in the cocktail class.
