The Tampico highball is a combination of Campari, Cointreau, and tonic water. Campari must be the biggest-selling bitters of all. Unlike others, it is not a subtle flavouring agent for others drinks, but a drink in its own right. It is considered an aperitivo amaro (bitter) made from the infusion of herbs with a unique bright red colour. Campari is a drink you either love or hate. What do you mix with it? The classic mixer is a combination of  soda water and orange juice, another option is to mix it with tonic water. I added the smooth orange liqueur Cointreau to balance the bitterness of Campari to give a great refreshing drink.
