In Provence, South of France, people drink Pernod & water a few times a week. We kept the Aristocrat cocktail simple, and just substituted tonic water for the tap water. Et Voilà! Creating one of the most refreshing cocktails. Pernod is made using anise as its main flavouring ingredient.  It is perhaps the most familiar pastis on the market today, and Pernod is an excellent  absinthe substitute in most recipes.
