Pernod is an absinthe substitute made by Pernod et Fils, France, a company that has produced true absinthe before France banned it in 1914. We used a good quality sparkling wine instead of Champagne. This sparkling cocktail is refreshing, fruity with a mild anise flavour on the finish.
